The pork

Raised in the trees, not on concrete.

Ours root through fir and pasture with shelter and room to move. They grow at their own pace rather than to a schedule, and they are handled by the people who raised them.

There are always hogs here. Our breeding stock and the groups coming up behind them move through the trees on rotation. The first group to go is at Windy N now, a USDA inspected plant, being processed and aged, and those boxes come back late October, frozen and vacuum packed, collected here at the farm.

The next litter is due within the month. The round of boxes after this one is about six months out.
